This recipe can be made with any cooked winter squash or pumpkin. Can be baked into individual cookies or made into cookie bars.

Instructions
  1. Stir together dry ingredients and spices.
  2. In another bowl, cream oil/butter with honey, beat in egg until smooth. Stir in squash/pumpkin and don't worry if the mixture seems strange.
  3. Mix dry ingredients with wet and stir in nuts & fruit if adding.
  4. Drop by heaping tablespoon onto oiled cookie sheet. Bake at 325 F for 15 minutes until golden.
  5. For bars: Smooth batter into an oiled 8x8" pan and bake at 350 F for 25 minutes. Cool and cut into squares.
Recipe Notes

*To make the recipe vegan, substitute maple syrup for the honey and 1 flax egg for the egg. (Flax egg= 1 T ground flax seed mixed with 3 T water, allowed to set in fridge until gel-like)
