Wash and dice potatoes and celeriac. Potatoes can be skinned or remain unpeeled, depending on preference.
Boil vegetables in pot of salted water until tender, around 30 minutes. Ideal softness is for a fork to be able to slide into both kinds of vegetables like butter.
Drain water from pot and add remaining ingredients to cooked vegetables. For chunkier mashed potatoes, use a masher to soften vegetables and mix in butter and sour cream until butter is melted and all ingredients are incorporated. For creamier mashed potatoes, use an electric hand mixer or transfer all ingredients to a food processor and blend until desired smoothness.
