Use this super simple recipe for tried-and-true pickled beets. Add hard boiled eggs to the mix for beautiful beet-pickled eggs!

  1. Steam the beets whole until they are soft enough to slice.
  2. Slice beets and put them in a glass jar.
  3. Mix the apple cider vinegar, water, spices, and maple syrup and pour the mixture over the beets. Add extra water if needed.
  4. Secure the jar with a plastic lid (vinegar corrodes metal)! Store in the fridge and enjoy at any time!
  5. If you'd like to pickle some eggs in your beet mixture, add hard-boiled eggs to the jar and let them pickle for a few hours to a few days.
