Toss cut beets with oil and honey. Mix in herbs and salt and pepper to taste. Roast in the oven at 400 F for 20-30 minutes, until soft.
*This would be the time to add diced pears or apples if you are using them in the recipe
Chop greens coarsely and add to the beets during the last 5 minutes of roasting. Cook until greens are softened, and a little crisp around the edges if you'd like.
Serve with rice or another grain, goat cheese, or as a side to nearly dish!
