A nice condiment or additional to almost any dish--especially hummus, Indian curries, and Greek salads. This recipe is adapted from Mollie Katzen's Moosewood Cookbook.

  1. Cook onion and eggplant together with oil in a saucepan over low heat. Add a small amount of salt to start, and add more throughout as necessary. Cook until both eggplant and onion are soft, about 15 minutes.
  2. Add all remaining ingredients, except lemon juice, and continue to cook over low heat until peppers are soft and all elements of relish are incorporated, about 10 minutes.
  3. Remove relish from heat and add lemon juice. Serve relish hot or cold, with bread, crackers, or another dish.
