Marinated Summer Squash

Instructions
Summer Squash Salad
  1. Wash summer squash and dice finely. Place in salad bowl with scallions and herbs.
  2. Combine yogurt, lemon juice, and honey and pour over summer squash mixture. Refrigerate 30 minutes or longer before serving.
Marinated Summer Squash
  1. Wash summer squash and slice thinly. Heat the oil in a skillet and saute the squash until tender and lightly brown.
  2. Place the squash in a bowl and allow to cool well before mixing in the other ingredients. Allow the salad to chill well before serving.
