Instructions
  1. Melt fat in heavy bottomed pan over medium heat. Sautee sweet potatoes, carrots, apple, and onion, stirring until onions are translucent (about 10 minutes).
  2. Stir in the rest of the ingredients and bring to a boil. Reduce heart and cover. Simmer till all is soft, about 30 minutes.
  3. Puree soup with hand blender or by transferring to food processor.
  4. Simmer a little longer and add extra liquid to obtain desire consistency. Feel free to add a few handfuls of greens a this point if you want a little color in your soup!
