This recipe is an extremely easy way to spice up your pasta game and use up some of those Winter (or Spring) beets you've got in your fridge! And, you get to eat PINK pasta!

  1. Chop the beets coarsely and boil until you can pierce them easily with a fork. Remove beets from boiling water and allow them to cool 5-10 minutes. Save the water you cooked the beets in.
  2. Sauté onion and garlic in a small pan until onions are translucent. Set aside for the sauce.
  3. Cook pasta in a pot of salted water according to package instructions. Once cooked to your liking, strain pasta immediately.
  4. Add nuts to a food processor or strong blender and pulse until nuts are finely chopped. Once beets have cooled slightly, add them to your nuts along with the onions and garlic, olive oil, red wine vinegar, and salt. Pulse until your sauce is smooth and pesto-like. If your mixture is lacking liquid or your machine is struggling to blend it well, you can add additional olive oil or even a little of your beet-cooking water to thin the mixture.
  5. Once your sauce has reached your desired texture and taste, toss with cooked pasta in a serving bowl. You may choose to top each dish with freshly grated parmesan, chopped chives, or fresh parsley.
